Little Joe II_
Hops: Columbus, Nelson Sauvin, Strata Malts: German Pilsen
Little Joe II is a hoppy little American Pilsner brewed with a traditional Pilsner grain bill, step mash process, and lager yeast, and then hit with heavy doses of Nelson Sauvin hops in the Whirlpool followed by Strata in the dry-hop. This gives an otherwise traditional Pilsner a hoppy kick on both the flavor and aroma. Strata starts it off with a dank strawberry aroma followed by the Nelson which provides a white grape characteristic.
Little Joe II, an American rocket used from 1963-1966, was the smallest of four launch rockets used in the Apollo program. Its purpose was to ensure the safety of the astronauts by testing the launch escape and earth landing systems.

Hops: Czech Saaz, Sterling, Celeia Malts: Belgian Pilsen, Pale Wheat, Flaked Wheat
Session Saison, Franco-Belgian style, easy-drinker historically brewed for miners during the European Industrial Revolution. Lower in alcohol, yet retains a fuller mouthfeel and body due to healthy additions of wheat in the grist. French Saison yeast lends subtle pepper and spice notes to the finish.

Farmhouse Spelt Saison
Hops: American Noble Citra, Mosaic, and Laurel Malts: Belgian Pilsen, Belgian Spelt
We brewed this Saison as traditional as we could being a city brewery, with the one exception of the hops. A step mash using Spelt, a traditional grain in the wheat family, and French Saison yeast which we allowed to naturally free rise in temperature during fermentation give this beer a smooth body and a Belgian yeast ester finish. We used American Noble Hops, which are the leftovers from the Cryo hop process. We used Citra, Mosaic, and Loral, but due to the cryo process the American Noble versions of these are around 3% alpha and present more grassy and herbal aromas and flavors similar to European Noble hops. Ben's House IPA_
East End IPA

Remember the West Coast IPA? If you're not a hop that's from the West Coast you're not invited to this party. Columbus, Cascade, and Centennial are used throughout. Lingering bitter notes are complemented by classic West Coast floral and citrus aromas.
Ben, one of the founding members of True Anomaly, developed this tasty IPA long ago in the driveway of the TABCO brewing headquarters (aka his house). After experimenting with various yeast strains we found a particular English ale yeast that imparts a rich, complex flavor profile which balances the hop-forward character of this West Coast/House IPA.

DDH North East IPA
Hops: Nelson Sauvin, Waimea, and Pacifica Malts: German Pilsen, Pale Wheat, Flaked Oats
Strictly New Zealand hops in this NEIPA. Nelson Sauvin, Waimea, and Pacifica. These NZ hops are a bit softer and delicate than today's West Coast American citrus hops, but this beer still brings the juice but remains soft and drinkable.

Heat Shields are for Sissies_

A strong and dark Belgian perfect for the colder months. Upfront flavors of figs and dates with a slightly sweet start that finishes with strong Belgian spice characteristics. Let warm up for best results!

Sour, Wild, Fruited, & Experimental
Fruited Sour: Raspberry + Red Currant
Hops: Styrian Celeia, Czech Saaz Malts: 2 Row, Spelt
Beryl is our kettle American Sour refermented with raspberries and red currants. It's pinkish hue is complimented with a floral rose aroma, with a tart refreshing raspberry finish.

Wood-aged Dry-hopped Grisette
Hops: Czech Saaz, Sterling, Celeia, Lemondrop Malts: Belgian Pilsen, Pale Wheat, Flaked Wheat
Grissom is our base Grisette aged for roughly 4 months in an oak foeder with a mixed culture yeast and bacteria blend, and conditioned on lemongrass and lemondrop dry hop. Expect citrus flavors up front with an oak finish, and saison yeast flavors in the background.

Barrel-aged Tart Saison
Hops: Crystal, Liberty Malts: Belgian Pilsen, Vienna, Unmalted Wheat, Flaked Wheat
Freedom 7 is a Tart Saison brewed with a simple grain bill consisting of predominately Pilsner malt with a touch of Vienna and Wheat, and then fermented in one of our American Oak Foeders for approximately nine months. The French Saison spice characteristics are lightly present in the background, and the mixed-culture dominates with a mineral, pear aroma and soft acidity throughout.
